Even if we don’t fully agree with unconventional processing, we’re curious enough to explore it and this lot will definitely find its followers.

This coffee originates in the Huila region of Colombia , specifically from plantations known as Río Negro, where local growers mainly cultivate the Pink Bourbon variety – a genetically interesting variety known for its aromatic expressiveness and natural sweetness. The climate in this part of Colombia is ideal for high-quality Arabica: an altitude of around 1,650 meters above sea level, a combination of warm days and cooler nights, and rich soil allow the cherries to grow slowly, which promotes the development of complex aromas and delicate acidity.

Processing

This coffee is processed using the washed method with lactic fermentation, which was chosen to emphasize its fruitiness while maintaining the purity of the cup. After careful hand-picking, the cherries are pulped and left to ferment briefly with the addition of lactic cultures, which gently accentuate the sweet and tropical nuances. This is followed by thorough washing and drying on raised beds, where the beans are regularly turned to achieve even drying without unwanted flavors. This approach gives the resulting cup profile clarity, purity, and harmony between fruity and sweet notes, making Colombia Río Negro a great choice for lovers of fresh and aromatically distinctive coffees.
