Costa Rica Las Lajas: intense, elegant, clean

Costa Rica Las Lajas, Villa Sarchi is the kind of coffee that wins you over through clarity. It’s not heavy, not chaotic, and it doesn’t rely on gimmicks. It’s simply a well‑executed natural, where notes of nectarine, blackberry, grape, and cocoa come through cleanly, without noise in the background. Its intensity stays elegant from the first sip to the last, supported by a natural sweetness that rounds everything out.

Origin

This coffee comes from Central Valley, one of Costa Rica’s oldest and most fertile coffee‑growing regions. The Atlantic‑influenced climate, 1500 m elevation, and volcanic soils create ideal conditions for Villa Sarchi, a local variety appreciated for its clarity, sweetness, and bright acidity.

Las Lajas Farm, run by the Chacón family, is known for its meticulous approach and for the way it blends tradition with innovation. Although they no longer hold organic certification, they continue to work according to ecological principles: no chemicals, compost produced on the farm, and minimal water usage.

Processing: Natural, Las Lajas style

At Las Lajas, natural processing is treated as a craft. The cherries are hand‑picked, carefully sorted, and slowly dried on raised beds. The drying pace shapes the character of each lot, and over the years the Chacón family has developed several signature methods — Alma Negra, Perla Negra, Yellow Diamond — each with its own approach to fermentation and drying.

The result is a natural coffee with layered complexity but also a surprising level of clarity — a balance that’s not easy to achieve.

A farm built on innovation and responsibility

The Chacón family started with limited resources but a clear vision: to produce high‑quality coffee while respecting the soil and the people who work it. Today, their farm and mill provide stable jobs for around 20 permanent workers and up to 100 pickers during harvest season. Innovation is part of their identity — they constantly experiment with new varieties and processing methods that highlight the region’s terroir.

Why it’s worth trying

Costa Rica Las Lajas – Villa Sarchi is a great choice for anyone who wants a natural coffee that’s intense yet refined. It’s complex without being overwhelming, expressive yet approachable. It tells a genuine story about a family, a region, and a variety cultivated with care and respect.
