the coffee, but for nerds

San Agustin Estate, located in the humid north western cloud forest of Ecuador, is well known for being one of the only farms to produce natural lots in this region, and they usually are exeptional.

The Project

The project "neighbours" began 5 years ago, when Alfonso met a few of his neighbouring producers who were thinking of abandoning coffee production. Instead, Alfonso offered them a good price for their cherries and security of purchasing their whole production every year. Since then San Agustin takes care of procesing the cherries on site and with their advanced knowledge of fermentation and the result is an outstanding natural from the north west of Ecuador, which is rarely found.

The Process

This pilot project started 4 year ago with 3 neighbouring farms of San August Estate. Harvested in the best possible cherry conditions, the coffee arrives at the processing facilities to be rinsed, sorted and floated. It`s then placed in closed tanks for about 120 hours or until the pH reaches 3.5 - 3.6 range and then it`s taken to the "oreadores" (slow drying chambers) for 18 days. After reaching optimal humidity range (9-11%) the coffee is moved for stabilising in optimal conditions in Quito for at least 3 month until milled.
